Makes lunch for two for two days.

1lb boneless skinless chicken breast
12 romaine lettuce leaves
1 package coleslaw or broccoli slaw mix
3 green onions, thinly sliced
1/4 cup natural peanut butter
1/4 cup water
2 tbsp soy sauce
2 tbsp lime juice
2 cloves garlic, minced
(Mix all ingredients together in a bowl)
Saute chicken breast and dice into 1/2 inch cubes.
Wash lettuce leaves and spread out on a plate. (Reserve half the leaves for leftovers)
Fill with chicken, 1/4 cup coleslaw mix, green onions, and cilantro.
Drizzle with Thai Sauce.
